This weekend, I baked a batch of old-fashioned goodness… Snickerdoodles. I made half the batch with the customary cinnamon and sugar coating and half with just sugar. The cookies are always yummy as is, but I also use them as a base for individual fruit pizzas. At the cabin, I can have the toppings including the cream cheese mixture, glaze and cookies ready to go for everyone to make their own desserts. Fruits that work well for toppings included raspberries, blueberries, kiwi, bananas and strawberries. For a quicker version, use spreadable cream cheese. The strawberry flavored version is very good.

Cream Cheese Spread
  1. Beat cream cheese. sugar and vanilla until smooth.
Fruit Pizza Glaze
  1. Combine 1 teaspoon cornstarch, 1 tablespoon water, 1/4 cup orange juice, 3 tablespoons powdered sugar.
  2. Combine glaze ingredients in small saucepan. Bring to a boil over medium heat, stirring constantly:cook and stir 1 minute. Cool. Spread over fruit.
