Since Sunday was Mother’s Day, I decided to make my mother’s favorite bar recipe, Mounds Bars, to take to the cabin. She made these often for many of the weekends at the lake during my childhood. It seemed fitting to have them this year as a tiny reminder of the countless hours she spent over my lifetime making things special. And it was a nice way to talk about her and all she did for a little while. She loved the cabin.
Ingredients
- 2 cups graham crackers, crushed
- 3 tablespoons brown sugar I use half light and half dark brown sugar
- 1/2 cup butter, melted
- 1 can sweetened condensed milk
- 2 cups flaked coconut
Frosting
- 1-1/2 cups brown sugar lightly pressed into the measuring cup
- 1/4 cup plus 2 Tbsp cream both heavy and half and half work
- 1/4 cup butter
- 3/4 cup semi-sweet chocolate chips

Instructions
- Preheat over to 350°. Mix cracker crumbs, brown sugar and melted butter.
- Pat into a 9 x 13 inch pan. Bake 10 minutes. Cool to room temperature.
- Mix sweetened condensed milk and coconut. Spread over graham cracker layer and bake 15 minutes more. Cool
Frosting
- Combine brown sugar, cream and butter. Boil 1 minute. Cool 1 minute. Add chocolate chips and stir until smooth. Spread over coconut layer.
