The Ice Box Cookie has been in my recipe box for years and I turn to it often because the cookies are so yummy and I like have extra dough ready in the refrigerator or freezer to take out and bake a fresh batch.

Instructions
  1. Cream butter and both sugars until mixture is smooth. Add eggs and beat. Mix flour, soda and salt in a separate bowl and whisk together. Add to creamed mixture. Stir in walnuts. Divide dough into 3 parts and make into long rolls. Wrap with waxed paper and chill or freeze overnight. Dough is very soft and impossible to cut unless very cold or frozen.
  2. Cut into 1/8-inch slices; put on cookie sheets and bake 10 – 12 minutes at 375°. Let rest a few minutes when out of the oven and then continue to cool on a cooling rack. They are very tender cookies and will break if handled before set. This is why they melt in your mouth and are so yummy.
