The Ice Box Cookie has been in my recipe box for years and I turn to it often because the cookies are so yummy and I like have extra dough ready in the refrigerator or freezer to take out and bake a fresh batch.
Ingredients
- 1 lb butter
- 1 cup packed brown sugar
- 1 cup white sugar
- 2 eggs
- 5 cups all-purpose flour
- 1 tsp baking soda
- 3/4 tsp salt
- 1 cup chopped walnuts
Servings: dozen
Instructions
- Cream butter and both sugars until mixture is smooth. Add eggs and beat. Mix flour, soda and salt in a separate bowl and whisk together. Add to creamed mixture. Stir in walnuts. Divide dough into 3 parts and make into long rolls. Wrap with waxed paper and chill or freeze overnight. Dough is very soft and impossible to cut unless very cold or frozen.
- Cut into 1/8-inch slices; put on cookie sheets and bake 10 – 12 minutes at 375°. Let rest a few minutes when out of the oven and then continue to cool on a cooling rack. They are very tender cookies and will break if handled before set. This is why they melt in your mouth and are so yummy.

I never seem to be able to replicate the things my mom always made, but I can get close.
